They have been part of our menu almost as long as we have been making our Scaletta bread. Scottish in origin, our scones recipe came to us in the 1940s from a maritime Scottish baker /chef who we had the good sense to hire! His legacy lives on in these scones to this day. Our home-canned peaches are one of our most-loved products and a gift that is certain to be remembered and enjoyed by everyone. In our family Christmas-time was the soonest we were allowed to start opening these jars of our mother's canned peaches. Continuing this family tradition, each fall we prepare a limited number of these jars of Niagara-Region peaches. A unique process is followed in their preparation and they are actually baked in the jars in our bakery ovens. This exceptional process helps preserve the celebrated taste and firm texture of these tree-ripened fruits.

These cookies trace their origins to Sicilian bakers and their rich blending of European and Arab baking traditions. There are countless interpretations of this cookie but it is the fig-filling that is its most important component: a blend of fig, orange, spices which perfectly displays the genius of the Sicilian baking tradition. This rich fig-jam is rolled into a tender cookie shell and cut into tubes.
Traditionally, they were formed in a curved bracelet-shape, the source for part of the name "Buccellati", which means “small bracelet”. It is Cuccidati, however, that is the name most widely used by Sicilian Americans. They are an indispensable, nostalgic cookie for generations of Sicilian Americans.
Our Buccellati Cuccidati have kept alive this tradition. Made entirely by hand, these fruit filled cookies are complex and delicious.

From the ancient city of Prato in Tuscany comes this recipe. These are the biscotti that have defined the term for most Americans, and with which most are familiar. Our Biscotti di Prato are true to the Tuscan original in size and, significantly, made without butter or shortening of any kind. This omission of added fat is a hallmark of these biscotti. They begin as long (two-feet long by three-inch wide) almond-studded loaves and are then sliced and baked again. Emerging from the oven, after this second baking, as crisp finger-cookies embedded with almonds. They are simply one of the most sophisticated biscotti of all, celebrated for their extremely crisp texture and elegant clean taste.
Traditionally they are paired with the Tuscan dessert wine,Vin Santo, but may be equally enjoyed with any sweet wine and all hot beverages, especially espresso.
