This short grain rice took its name from the town of Arborio in northern Italy. In the United States, Arborio Rice is the most commonly used Italian rice for preparing risotto. When cooked, the rounded grains are firm, creamy, and chewy compared to other varieties of rice. Arborio has a starchy taste and blends well with other flavors.
