The Di Camillo family of Niagara Falls, New York, has been baking their unique, hand rolled scaletta bread for their neighbors since 1920. Scaletta means "small ladder" and the name refers to the back and forth curling of the dough which occurs when the loaf is formed, giving the bread its distinctive shape. Each loaf is hand rolled, curled, split, and then slowly baked directly on the oven hearth. The result is a rich, thick crust and a complex fiber-like texture. This is authentic artisan bread production that has remained essentially unchanged for over eighty-five years. Made by hand in a four-hour process with no sugar, shortening or preservatives this classic bread is the essence of time-honored slow food preparation.
