The small, dark, wrinkled, very fleshy “taggiasche” olive is a rare, highly prized variety. It’s considered one of the best Italian olives and the addition of Italian tomatoes, rich in taste and freshness, is a great combination for a very tasteful sauce. One jar is sufficient for one pound of pasta and is best not reheated: simply add to your freshly-cooked pasta.
