Instant Polenta is made from coarsely ground Italian-grown flint corn. The classic preparation ratio is 1 part polenta to 4 parts salted boiling water. For added flavor, broth can be used, or some of the water can be replaced with milk (our preferred method). Bring your liquid to a full boil then slowly pour your polenta in while stirring continuously over medium heat until it thickens. You can stir in butter or cheese for added flavor.
