finest. The highly specialized procedure involved in making this cake is measured in days,
not hours. A two-day production is required before these beautiful bread like cakes are ready
to bake. This natural rising cake is made from a mother starter and fermented over two
days. It is this natural fermentation, which makes possible the miraculous keeping qualities
of this soft, sweet cake and make it one of the triumphs of the Italian bakers art.
