Millet is an ancient grain more nutritious than rice which can be used in similar ways. It is rich in protein, calcium, Vitamin B, iron, and is gluten free. The flavor can be enhanced by lightly toasting the millet before boiling it in water (1 cup of millet to 2 ½ cups of salted water). As with polenta, broth can replace water with butter and cheese as an added enhancement. Millet is at its best pre-cooked and then added to steamed or sautéed vegetables for added nutrition and bulk. It is also wonderful added to salads, soaking up dressing, coating lettuce, and adding protein and iron to everything it is added to.
